Lapis Surabaya ~

Surabaya style Kue Lapis. Its easier to make because its only three layers than the traditional Kue Lapis which are made of 20-30 layers. The difference is the taste, Kue Lapis has a good spice flavor and aroma where Lapis Surabaya is more towards refreshing and moisture, as each layer is brush with some strawberry sauce.

I have make this cake with homemade strawbery sauce, if you want simpler way, you can use your favourite strawberry jam. 

​

And the drawback of making this cake is you need to have 2 same size baking pan. :( 

But, we should try it out because it taste quite delicious and very simple to do.

Lapis Surabaya

(9"x9"x3")

Ingredients

Strawberry Jam/Sauce

 

Yellow Layers (Top and Bottom)

A.

23 egg yolks

2  whole eggs

150g caster sugar

 

B. (Sifted)

100g plain flour

30g corn flour

30g milk powder

C.

150g butter

100g tin golden churn/margarine

 

1 tsp vanilla essence

​

Chocolate Layer (Middle)

A.

14 egg yolks

1 whole egg

75g caster sugar

​

B. (Sifted)

15g unsweetened cocoa powder

15g milk powder

50g plain four

​

C.

75g butter

50g tin golden churn/margarine

 

Directions

1. Line 2 same size  baking pan with baking paper.

2. Preheat the oven to 200C. 

​

First, we do the Yellow Layers:

3. Melt ingredients C,

(Remove from heat once half the butter are melted. The rest of the butter will melt down eventually as we don't want the butter to be too hot).

Set aside to cool down. 

4. Beat ingredients A together until pale and fluffy and the batter can form ribbon like in the pic.

5. Add ingredients B, bit by bit and continue to mix wel at lower speed. 

6. Add ingredients C and vanilla and continue to mix until well blended.

7. Divide the batter into 2 pan equally. 

(Mine is around 450g each pan)

8. Bake in the oven at 200C for 20 min until cooked. 

9. Remove from the oven and set aside to cool down.

Next, we do the Chocolate Layer:

Repeat steps 3 to 9.

 

Aseembly:

Place the yellow cake at the bottom and then brush generous amount of strawberry sauce on top. Next place the chocolate layer on top and brush with the same strawberry sauce and place the final yellow cake on top. Trim all four sides and ready to be serve.

Strawberry Sauce (you can prepare this in advance and use the leftover in pancake, waffle and bread)

Ingredients

350g strawberries

1/2 -1 lemon (depending whether your strawberries are sweet or sour)

45g sugar

45g water

10g corn starch

Direction

1. Cut straweberries into small pieces.

2. Zest and juice the lemon. 

3.Combine all ingredients except the strawberries in the saucepan over medium heat and whisk well.

4. Add in strawberries and mix gently. Bring to a simmer and cook for 5 minutes, stirring/breaking strawberries up constantly.

5. Remove from heat when the mixture thickens. Allow to cool down slightly and user a blender to puree it. Store in the fridge. 

(If you find your puree too watery, cook over low heat  again until it thicken)
