

Mango Glutinous Rice
A popular classic Thai dessert that you should make during the mango season. And they are pretty easy to do, of cos you dont need to make it into sushi like mine. Enjoy!!!
Ingredients

1 cup glutinous rice

1 cup coconut milk

1/4 cup granulated sugar

1/2 tsp. salt

2-3 pandan leaf (tie into a knot)

1-2 ripe mangoes, peeled and sliced (keep in the fridge)
Directions
​1. Rinse the rice once or twice and soak for at least 4 hours or overnight until the rice soften and will break easily when pressed between your fingers.
2. Drain the rice and steam for around 20 - 30 min. Take your steamer, put water in the bottom and cover the steam section with cheese cloth or muslin cloth. Pour the sticky rice on the cheesecloth, cover with the lid and put it on the stove on medium to high heat. Sprinkle a little water over the top once or twice during the cooking time. The sticky rice will become translucent when done.
3. When the rice is about 20 minutes into its steaming, prepare the coconut sauce by heating the coconut milk, sugar, salt and pandan leaves together in a saucepan until well mixed and smooth. Remove the pandan leaves.
4. When the glutinous rice is cooked, transfer it in to a bowl. Pour half of the coconut milk into the bowl and mix it with the glutinous rice. Keep stirring until it becomes a thick porridge consistency. Add more coconut milk if required but not all to reserve for later use. Let stand for 15-20 minutes to allow the rice to absorb all the coconut milk. Leave it to cool to room temperature.
5. Prepare your mango. Serve the sticky rice with the chilled mangoes. Drizzle the reserved coconut milk over the rice and top it with some toasted sesame seeds.
6. Serve immediately and not recommend to fridge.
Optional (Sushi Pattern):
Slice the mango thinly lengthwise with slicer and line them overlapping on the sushi mat (cover the whole sushi mat with cling wrap).
Scoop prepared sweet coconut sticky rice onto the mango slices as shown.
Then very gently and carefully roll everything up sushi-style, Cut into 3 cm height, drizzle with coconut milk and sprinkle with sesame seed.
