

Mooncake Cookie ~ 公仔饼
This cookie is usually in piggy shapes...but I am too lazy to mould them into pig...so I just used my cookie mould to make all these cute mooncake cookies...these are to satisfy the kids ..
Its actually made from the dough that is used to make traditional mooncake. So if you have your own recipe you can just bake them into cookie instead of the whole mooncake.
Ingredients
300g cake f|our
180g Golden syrup
5g alkaline water
60g cooking oil
1 egg yolk
1 tsp milk
Mix egg yolk and milk and then prepare a brush.
Direction
1. Mix golden syrup and alkaline water with spatula.
2. Sift the cake flour in a big bowl, pour in golden syrup that is mixed with alkaline water and then pour in the cooking oil. Gently mix all ingredients with spatula by first moving in round from the sides and slowly go into the middle. Do this until they all all mixed well.
3. Use hands and knead them into a big ball, cover with cling wrap and set aside for 1 hour.
4. Preheat oven to 150C.
4. Take them out to working table and roll them into 1/2cm thickness, use your mould to cut into desired shape and place on lined baking tray. You can re-knead and roll the dough and repeat the process of moulding the cookie. Repeat this process until all dough is used up.
5. Spray the cookie with water and bake in the oven for 5-6min depend on the size of your cookie.
6. Take out from the oven and brush with thin layer of egg yolk over the cookie and then rebrush for second time. Bake in the oven again at 140C for 10-12min.
8. Take out from the oven and let them cool before storing in airtight container. Best to be consume after 3 days.
