

Shio Suta Don 塩すた丼 (Rice Bowl top with Stir Fry Salt Pork) ~
I came across this dish during my holiday in Tokyo and I have been going back to the same stall for my dinner for few nights, I know I am crazy but I just cant help it.
But when I am back to Singapore, my "Boss" miss this food so much that he request for me to replicate one for him. And so this is created out of my memory how it is taste like and imagination how it should be cook. Of cos I am not 100% success in replicate it, but its enough to satisfy my boss. And hopefully he remember to give me BIG BONUS this year hahah.
If you are lazy and out of idea what to cook for dinner, this is a good choice, all can be done within 15min (exclude rice cooking time).

Portion: 2 bowls
Ingredients:
300g thinly sliced pork belly
few pcs of ginger
2-3 stalks of onion (cut to 6cm length)
4 sheet of seaweed
2 egg yolk (optional)
1.5 cup of Japanese rice
2 tsp minced garlic
1-2tbsp sesame oil
1tbps corn starch mix with water
Seasoning
2tbsp soy sauce
2tbsp mirin
2tbsp sake
1/2cup chicken stock
salt and pepper (amount based on your liking)
Directions:
1. Blanch thinly sliced pork in boiling water until no longer pink and drained well. Set aside.
2. Heat sesame oil in a wok, add garlic and fry until fragrang add ginger and onion and stir fry for 30 seconds. Add blanched pork and continue to stir fry for a minute, add the rest of the seasoning and stir fry until fragrant. Finally add the corn starch with water and cook for a while and turn off the heat.
4. Served with Japanese rice in a bowl. First fill up the bowl with Japanese rice then top with 2 seaweed and then the stir fry pork and finally egg yolk in the middle and served right away. Mix the egg yolk with hot rice before eat.
