Salmon Baked Rice ~

A fuss-free, simple and nutritious meal.  Instead of cooking two to three dishes, you can mix vegetable, salmon, cheese and rice, and bake them into just one dish.

Today I am playing with my new toy “Samsung Smart Oven” which has this function call Hot Blast that has direct downstreaming heat, ideal for making my bake rice crispier on top and evenly cooked!

I can also microwave the mixed vegetable and grilled the salmon continuously, meaning I do not need to wash extra pots, which is great for me who has longgggggg TO DO LIST. One of the best parts is that there’s a Grande Turntable in this oven, allowing me to cook on a larger scale or with odd sized dishes!

The full name of the oven is Samsung HotBlast™ Smart Oven.

Ingredients

200g salmon, cubed

50g onion, finely chopped

2 bowl of cooked rice

olive oil

100g frozen mixed vegetables

White Sauce

30g butter

30g flour

350ml milk, heated

Salt and pepper

50g Shredded cheese (or as much as you want)

Direction

1. In a pot of boiling water, blanch salmon until they turn opaque. Remove from water and set aside. Using the remaining water and blanch mixed vegetables for 2-3min, drain well and set aside.

Optional:

Microwave frozen mixed vegetables @power 600 for 2-3 min and let them settle in its own steam for 2-3min.

Grilled fillet salmon (cubed only after grill) in the oven, 6 min on each side. (brush with olive oil if necessary)

(If you are using Samsung Smart Oven, you can easily use the Auto Cooking Mode, where there’s automated cooking time and temperature for certain recipes. This helps to save time and makes it simpler for beginner cooks. I personally used the Auto mode function A9 for this recipe, placing the salmon on the lower rack, flip around as soon as the beep sounds and let it stand for 2-3min after cooking – very convenient!)

2. Heat olive oil in a frying pan over medium heat. Add onion and stir fry until soft. Add rice and stir fry for 1-2 min until they are evenly heated. Add salmon and gently combine them with the rice. Finally season with salt and pepper and scoop them into oven-safe baking dish.

3. Heat up milk in microwave for 45 seconds to 1 min.

(I can easily warm up my milk using Samsung Smart oven @700W for 45seconds.)

4. To make the white sauce, melt butter in a pan over low heat. Add in the flour and mix well for 2 min (until the paste cooks and bubbles a bit, becareful not to burn the flour!). Add hot milk and mix well until slightly thicken. Bring it to a boil and season with salt and pepper. Add mixed vegetable and cook for 2-3 min. Remove from heat.

5. Pour the white sauce over the rice and topped with a layer of shredded cheese.

5. Bake in preheated oven at 200C for 15 min or until the cheese starts to brown.

(For this recipe, I used the Samsung Smart Oven’s HotBlast function which cooks much faster while maintaining the taste and quality of the food)
