Tauco Ikan ~ Fermented Soy Bean with Fried Fish

 

I got to eat this dish in Indonesia since I was a kid, but ever since I moved to Singapore, I no longer has the chance to eat them. 

 

I love this dish for the fragrant deep fried fish simmered in the spicy, sweet and salty sauce.

So I ask my auntie to teach me and here is the recipe. However, I am too lazy to deep fried the fish in the house, so I ended up airfried them, and they still taste amazingly great. My favourite fish for this dish is pomfret, you can use your choice of fish.

 

Ingredients

1 pomfret fish

salt and pepper

lemon/lime

 

3 cm ginger, thinly sliced

3 cloves garlic

3 small red onion, thinly sliced

6 red chilli, thinly sliced

3 green chilli, thinly sliced

2 tbsp tauco (fermented soy bean or 豆酱)

300ml water

2 tbsp sweet dark soy sauce

1 tbsp sugar

1 tomato. quartered

 

Direction

1. Clean the pomfret and cut a few lines like below. Pat dry and squueze some lemon/lime all over it and then season with salt and pepper. 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

2. Arrange fish in the airfryer basket. Air-fry at 180 degC for the first 7 min. Then, 200deg C for another 12-15 minutes until golden brown. 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

3. In a pan, heat 1-2 tbsp cooking oil, and then add garlic, ginger, onions and chillies, and stir fry until fragrant. 

4. Next add tauco and continue to stir fry until fragrant, and then add water and simmer on low heat for 5min. 

5. Add the fish and then season with sweet dark soy sauce and sugar, season with salt and pepper if required, add tomato and allow the fish to be simmered in the sauce for a while and then turn off the heat. 

6. Ready to be served with a bowl of rice.
